Distiller (Spain) - (Ref: 1227)

 

Our client is looking for a competent, hands-on Distiller to join an exciting new project on the island of Mallorca. Their aim is to open a craft distillery on the island of Mallorca producing local premium spirits. There will be the only copper pot distillery in Palma and their focus is to be as green, sustainable and as local as possible. The plan is to implement a small-scale production process in a 500 litre copper pot still.

At first, they will be focusing on two products: Gin and Vodka. Most of their botanicals will be foraged from the island, as they want to focus on what the island is renowned for producing as well as exporting. It shall emphasise everything the island has to offer and will capture the heart and soul of the city of Palma. A 2000-year-old capital city full of charm, romance and history. 

The distillery is due for completion at the end of January, so they would be looking for someone to hit the ground running after the New Year. They are currently in talks with UK/EU distributors so everything could potentially escalate quite quickly. 

This is an exciting time to join this family run distillery. A great opportunity also for someone who would like to live and work on a beautiful island in the Mediterranean, creating local premium spirits. 

Key responsibilities:

  • Manage day-to-day operations of the distillery
  • Manage the spirit-making team ensuring consistent distillation of all spirits
  • Design a comprehensive sampling and recording programme
  • Work with other staff to define agreed upon specifications and processes
  • Maintain process logs
  • Develop a stock management plan
  • Promote the brand
  • Develop new styles of spirits, have the knowledge and passion for creating new award winning products, to add to the portfolio
  • Be the “face” of the distillery, often liaise with customers at product launches, tastings, trade shows and other events
  • Ensure full compliance with all site Health and Safety, AEAT (Agencia Estatal de Administración Tributaria)
  • Plan staff training and development
  • Maintain compliance systems, especially Health & Safety, Environmental, AEAT, Quality and other standards 

Skills, experience and attributes:

  • Brewing & Distilling MSc/Diploma or certification course in distilling or related field
  • At least one year in a production distillery with working knowledge of all aspects of distillery operations.
  • High attention to detail, especially to quality standards and compliance systems
  • Well-developed sensory skills for tasting and evaluating spirits
  • Flexibility to cope with change in a potentially rapid growing business
  • Ability to multitask
  • Desire for continuous improvement
  • Strong problem solving, computer and mathematical skills
  • Strong project management and managerial skills
  • Excellent communication skills and public speaking skills
  • Dependable, hardworking and professional
  • Comfortable with weekend and shift work
  • Spanish speaking preferred but not entirely necessary
  • Full, clean driving licence
