Distillery Manager (Phnom Penh, Cambodia) - (Ref: 1145)

Our client is a Brewery based in Cambodia who are expanding their business and are in the process of opening a new distillery . They will be producing Whisky, Gin and Vodka and are looking to recruit a Distillery Manager who will project manage the new distillery and then be responsible for all operational activities.  

The Distillery Manager will report to the Supply Chain Manager and manage distilling production operations in an environmentally friendly manner ensuring the safety, quality, quantity, cost and service objectives of the business.

Key responsibilities:

Phase 1: Distillery Project Management

  • Oversee the planning, implementation, and tracking of a specific short- or long-term project (distillery) which has a beginning, an end and specified deliverable
  • Carefully manage the project budget
  • Recruit and develop the required organisational production structure
  • Proactively manage foreseen (project) risk, mitigating as necessary
  • Direct and coordinate (with Supply Chain Manager) suppliers and contractors related to project of all machinery and building equipment to guarantee efficient and effective operation
  • Direct and coordinate the quality control function of all engineering and installation works
  • Assist the Supply Chain Manager or responsible manager by ensuring the equipment and installations are in accordance with required standards and specifications
  • Coordinate and plan meetings related to the project
  • Manage and lead a highly skilled flexible project-team, contractors, suppliers
  • Maintain Quality, Environment and safety Management Systems of works
  • Be responsible for the project team  and report to the appointed Owner’s representative (usually Supply Chain Manager or President)
  • Ensure  all targets are achieved OTIF (on time in full)
  • Manage the Project schedule and organisation
  • Plan training needs for new project staff and future operational staff
  • Set and enforce rules and disciplines within Project department
  • Cross check all reports, Bill Of Quantity (BOQ) 

Phase 2: Distillery Management

  • Manage and lead production personnel, plant and equipment so as to achieve company KPIs, production targets and conforms to company and government rules & regulations
  • Actively participate in the S&OP process, particularly on the supply side of alcoholic beverages (Sales and Operations Planning)
  • Actively lead the TPM implementation in the distillery (Total Production Management)
  • Train, develop and coach subordinates
  • Ensure and improve operational performance of equipment and organisation, at lowest possible cost and if necessary required modification / adaptation in line with TPM methodology
  • Follow-up implemented projects & procedures for sustainability
  • Maintain, review and implement hygiene, good housekeeping and safety procedures/instructions according to Good Manufacturing Practices and international Safety Standards. Act as a safety champion and role model
  • Initiate and assist the Supply Chain Manager in setting/updating departmental targets, objectives, plans and activities
  • Ensure established procedures and specifications are adhered to, in order to maintain product quality and production efficiencies
  • Assist in the coaching of staff in Quality Control, Brewing, Distilling, Packaging, Utilities and Engineering Support to improve knowledge and skills development
  • Generate a high level of morale and harmonious relationships with all involved stakeholders within the organisation
  • Resolve personal and other grievances within the department and to motivate and develop staff by deploying the required managerial style
  • Monitor and report progress: regular and timely reporting of project progress to the Supply Chain Manager 

Skills experience and attributes:

  • Master degree in brewing and distilling
  • Significant experience in food manufacturing industry, especially distilling industry, including experience as project/ senior operational manager
  • Practical experience in planned maintenance, engineering projects management, Safety Health and Environmental.
  • Production of distilled products
  • Fluent in English, verbal and writing
  • Excellent organisation skills with the ability to prioritise and adhere to deadlines
  • Proactive and flexible
  • Good leadership and communication skills
  • Good team player
  • Ability to use Initiative
  • Creative and enthusiastic
  • Flexibility around working hours as week end  work required on occasions
