Head Brewer (Home Counties, UK) - (Ref: 1333)

 

Our client is a UK Kombucha brewer and are looking for a Head Brewer to take on the next stage in the development of Kombucha. 

A year since launch they are now serving in several hundred of the UKs top restaurants (over 50 Michelin stars to their name), bars (many of the top mixologists), and hotels and beginning to expand into both London and regional pub chains.

The Founder has led the brewing and brewery development to date but they are now expanding at such a pace that they need to put someone in place with a much greater depth of knowledge and experience: deepening the understanding of the nature of their cultures and how to control their healthy development; greater control over their fermentation process to ensure absolute consistency every time; improved efficiency in the brewery; improving their monitoring and control processes and procedures. 

They are also now looking to build a much larger brewery. The Head Brewer will take on the challenge of designing and developing this facility in partnership with the Founder and an external brewing engineer. The Head Brewer will need to rapidly build knowledge and expertise in the Kombucha brewing process to be able to translate this to the new brewery design and build. 

Skills, experience and attributes:

  • University degree or equivalent in brewing, wine making, fermentation. A passion for research and learning in this area
  • Significant experience in scale brewing or wine making. Full understanding of brewing science, brewing processes and packaging. Leading the thinking behind the fermentation process. Constantly driving process improvement
  • Practical, hands-on approach to brewing/fermentation
  • Experience and aptitude for brewery design and engineering
  • A very entrepreneurial attitude
  • An understanding of Laboratory Operations / Quality Control procedures. Extensive knowledge of industry compliance standards: including safety standards, government regulatory programs, HACCP, SALSA and production management systems
  • Very digitally savvy
  • Great leadership skills. Ability to recruit, inspire and grow a great team
  • Innovative & creative
