Our client, a creator and distributor of premium spirits and wines, based in Scotland, is looking to recruit a Distillery Manager, who will be responsible for the day-to-day management of the operations and administrative duties required for the production and despatching of spirits. Identify, promote, and implement continuous improvement in all aspects of distillery operations utilising the appropriate continuous improvement platform.

Key Responsibilities include:
• Ensuring all areas of health and safety and environmental requirements are met and are compliant and dealing effectively with regulators to ensure standards are met if shortfalls occur.
• Production of new make spirit and gin – including distillery planning, managing, and improving all aspects of the distillery operation, maintaining spirit quality, and managing/ measuring raw material consumption against SAP stocks and reporting/ investigating deviations.
• Raw Materials and plant consumables must be timeously receipted onto appropriate systems.
• Management of onsite warehousing operations, including tanker filling, maturation warehousing, and stocktaking.
• Managing Distillery staff to ensure business objectives are met
• Develop annual budgets with Head of Distilleries whilst maintaining and operating the capital budget to meet quality and capacity requirements;
• Work with Head of Distilleries to identify and create compelling business cases where Capital Investment is required.
• Maintain product quality, volume commitments and contractual arrangements according to plans and standards agreed with Head of Distilleries.
• Monitor and manage the quality of raw materials and ensure that quality standards and associated quality paperwork are maintained by staff.
• Ensure compliance with HMRC statutory requirements and controls.
• Controlling and minimising costs and losses during production through effective measurement, process management and continuous process improvement.
• Administration Duties – Process necessary information on all relevant IT Systems. Produce documentation to satisfy HMRC and other regulatory bodies.
• Assist Maintenance Management Team and Technicians with maintenance through silent season planning and on-site contractor management.
• Continuous improvement in management systems – Identify improved methods for all systems employed in the distilleries in the fields of production, quality, purchasing, H&S, HMRC, environmental practices, security, IT, etc.
• Maintain the highest level of hygiene and food safety in compliance with HACCP requirements and FEMAS accreditation.
• Support Marketing activities required by the business to drive long-term brand profitability which may involve periods of travel within the UK and overseas.
• Working with Brand Home teams to enhance Visitor Centre experience at the distillery.

Personal Specification
• Science or engineering degree qualified with general certificate in Brewing or Distilling or willingness and ability to study for this specialist qualification
• Experience in a management role, preferably in the brewing, distilling or food manufacturing sector.
• Financially literate, able to manage distillery budgets and understand the financial implications of decisions.
• Good levels of IT knowledge, competent in the use of MS applications.
• Knowledge of SAP an advantage, experience working with ERP and reporting systems essential.
• Familiar with Excise regime and responsibilities of operating bonded premises.
